Zilch is a small Edinburgh brand that sells a single product: a monk fruit sweetener powder. It is not linked to the payment app with the same name. The powder is made by simmering monk fruit in water and drying the result with soluble tapioca fibre, and the brand points out that it contains no erythritol, allulose or artificial sweeteners. The founders met at a co-working space in Edinburgh and still run the business from the city.

It suits people who are cutting back on sugar in tea, coffee and baking and want to try something other than stevia or erythritol blends. Zilch is about three times sweeter than sugar, so the brand suggests starting with around a third of a teaspoon in a hot drink and adjusting to taste.

The monk fruit is grown in the Guilin area of southern China. The ingredients list on the pack is short: monk fruit infusion powder made up of soluble tapioca fibre and monk fruit decoction. The brand describes the taste as a mellow sweetness with hints of melon, pear and honey, without the cooling feel some sugar alcohols leave behind. It dissolves in hot drinks and baking, and the site explains how much to use in different recipes. As well as the website, Zilch lists a couple of independent health food shops that stock it, in Banstead and Ludlow, and the site links to other online retailers that sell it.
