Académie du Goût is a French cooking website set up by the chef Alain Ducasse and the media group Webedia. It collects recipes, videos and techniques from around 200 chefs, pastry chefs and Meilleurs Ouvriers de France, from Cédric Grolet and Nina Métayer to Guy Savoy and Anne-Sophie Pic, alongside an encyclopaedia of ingredients and a guide to restaurants in France.

One thing to know before you sign up: the whole site is in French and prices are in euros. If your French is decent and you want to cook the way French chefs do, it's a treasure chest. If not, the recipe pages will be hard going.

What's worth a look

Here are six recipes from the site that give a feel for what Premium unlocks, from a simple soup to a showpiece dessert.

As the weather turns, Stephan Paroche's soupe à l'oignon is a good place to start: it's rated easy, takes about an hour and a half, and leans on slowly softened onions, garlic and herbs. For something more ambitious, Alain Ducasse's risotto with ceps from Haute-Lozère needs 15 minutes of preparation and just over an hour of cooking.

Pastry fans get plenty too. Nina Métayer's crêpes are flavoured with orange and mandarin zest, and Guy Savoy's mirabelle soufflé is marked easy to intermediate. Many recipes come with a step-by-step video, and the site says Premium covers more than 8,000 recipes and 2,000 videos.

Away from the recipes, the encyclopaedia explains ingredients and kitchen tools, and the chef pages gather each cook's recipes in one place, which is a nice way to work through a favourite pastry chef's repertoire. Premium members also get a monthly subscriber magazine, private sales of cookbooks and an ad-free site. Payment is by Visa, Mastercard or Carte Bleue, so a UK card works, though your bank may add a foreign transaction fee on euro payments.
